Prepare the Stock

In a saucepan, heat the fish stock until it's simmering. Keep it warm over low heat.

Sauté the Base

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute.

Toast the Rice

Add the Arborio rice to the skillet and stir for 2-3 minutes until the rice is slightly toasted.

Deglaze with Wine

Pour in the dry white wine and stir until it has mostly evaporated.

Add Stock Gradually

Start adding the warm fish stock, one ladle at a time, stirring frequently. Wait until the liquid is mostly absorbed before adding the next ladle. Continue this process for about 15 minutes.

Add Seafood

When the rice is almost cooked (after about 15 minutes), stir in the shrimp, mussels, and squid. Add the cherry tomatoes and cook until the seafood is cooked through and the rice is creamy, about 5-7 minutes.

Season and Serve

Season with salt and black pepper to taste. Stir in the chopped parsley. Serve hot with lemon wedges on the side.
