Charcuterie

Method

Charcuterie

1

Prepare meats

Remove pepperoni, salami and prosciutto from packaging. If slices are large, fold each slice in half or into thirds to create small, biteable ruffles or rosettes. Arrange 12–15 folded pepperoni slices on one side of the serving board and 12–15 folded salami slices on the opposite side. If using prosciutto, gently drape small slices in loose folds near the soft cheese.

Cheeses & accoutrements

2

Prepare cheeses

Slice the semi-firm cheese into ½ cm slices or 1.5 cm cubes and place near the crackers. Leave the soft cheese whole or cut a wedge and place on the board with a small spreader or knife.

3

Add pickles, olives and condiments

Place cornichons or small pickles into a small ramekin or pile them neatly. Put olives in a separate small bowl. Spoon mustard and honey or fig jam into two tiny dishes and position them near the cheeses and meats for easy pairing.

Breads & crackers

4

Toast baguette (optional)

Preheat oven to 180°C (350°F). Lightly brush baguette slices with the olive oil and place on a baking sheet. Toast 6–8 minutes until lightly golden and crisp. Let cool slightly before arranging on the board.

5

Arrange assorted crackers and toasted baguette slices in small stacks or fan shapes on the board, leaving space between piles so guests can create combinations.

Assembly & finishing

6

On a medium serving board or plate, assemble components in groups: meats on two sides, cheeses near the center, crackers and baguette on another side, and bowls of olives and pickles nestled among them. Place mustard and jam near cheeses and meats for easy access.

7

Garnish the board with rosemary or thyme sprigs and lightly crack black pepper over the soft cheese and sliced meats for aroma and presentation.

8

Serve with small forks or toothpicks and cheese spreaders. Recommend guests combine pepperoni or salami with a slice of cheese, a dab of mustard or jam, and a pickle or olive for balanced bites.
