Preheat and prepare surface
Position an oven rack in the lower third of the oven and preheat to 500°F (260°C) for at least 30 minutes with a pizza stone or inverted baking sheet inside. If using a baking sheet, lightly dust it with cornmeal or line with parchment. Lightly flour a work surface.
Shape dough
On the floured surface, stretch or roll the pizza dough into a 10–12 inch round (or desired size). Brush the top lightly with 1 tablespoon olive oil to help browning and to act as a barrier so the crust doesn’t absorb too much sauce. Transfer the dough to a pizza peel or prepared baking sheet.
Buffalo Chicken Topping
Cook and shred chicken
Season the 8 oz chicken with 1 tsp salt, 1 tsp black pepper, and 1 tsp garlic powder. In a skillet over medium heat, add 1 tablespoon olive oil (from the dough section if not used) or use the 2 tbs butter; heat until shimmering. Add the seasoned chicken and cook 5–7 minutes per side (depending on thickness) until internal temperature reaches 165°F (74°C). Remove chicken to a plate and let rest 5 minutes, then shred with two forks or chop into bite-sized pieces.
Make buffalo sauce and coat chicken
In the same skillet over low heat, melt 2 tbs unsalted butter. Stir in 1 tbs hot sauce and 1 tsp honey (if using). Cook for 30–60 seconds until fully combined and slightly thickened. Return the shredded chicken to the skillet and toss until evenly coated in the buffalo butter sauce. Remove from heat.
Distribute chicken on pizza
Scatter the buffalo-coated shredded chicken evenly over the oiled pizza dough, leaving a 1/2-inch border for the crust.
Cheeses & Finish
Add cheeses
Evenly sprinkle 1 cup shredded mozzarella over the pizza, covering the buffalo chicken pieces. Crumble 1 oz blue cheese over the top in small clumps so you get pockets of sharp flavor after baking.
Bake the pizza
Slide the pizza onto the preheated stone or baking sheet. Bake at 500°F (260°C) for 8–12 minutes, rotating once halfway through, until the crust is golden and cheese is bubbly and slightly browned.
Finish and serve
Remove the pizza from the oven and let rest 2 minutes. Drizzle 2 tbs ranch or blue cheese dressing over the top in a thin stream (or serve on the side). Sprinkle 2 tbsp thinly sliced green onions and an additional pinch of blue cheese crumbles if desired. Slice into 6–8 pieces and serve immediately.
