Caramelize the Onions
In a large skillet, melt the butter over medium heat. Add the sliced onions and a pinch of salt. Cook slowly, stirring occasionally, until the onions are golden brown and caramelized, about 25-30 minutes.
Add Broth and Thyme
Once the onions are caramelized, add the beef broth and thyme. Bring to a simmer and let it cook for an additional 10 minutes. Season with salt and black pepper to taste.
Prepare the Bread
While the soup is simmering, preheat your oven to 350°F (175°C). Slice the French bread into thick slices and place them on a baking sheet. Toast in the oven for about 5-7 minutes until lightly golden.
Assemble the Soup
Ladle the soup into oven-safe bowls. Place a slice of toasted French bread on top of each bowl, then sprinkle Swiss and Provolone cheese generously over the bread.
Broil the Cheese
Place the bowls under the broiler for about 2-3 minutes, or until the cheese is bubbly and golden brown. Keep an eye on it to prevent burning.
