Prepare the Brussel Sprouts
Preheat the oven to 400°F (200°C). Trim the ends of the brussel sprouts and cut them in half.
Cook the Bacon
In a large skillet, cook the bacon over medium heat until crispy. Remove and let cool, then chop into small pieces.
Toss Ingredients
In a large bowl, toss the halved brussel sprouts with olive oil, salt, and black pepper. Spread them out on a baking sheet in a single layer.
Roast the Brussel Sprouts
Roast in the preheated oven for about 20-25 minutes, or until the brussel sprouts are crispy and golden brown, tossing halfway through.
Make the Vinaigrette
In a small bowl, whisk together the sherry vinegar and a tablespoon of olive oil. Adjust seasoning with salt and pepper to taste.
Combine and Serve
Once the brussel sprouts are done, remove from the oven and toss them with the cooked bacon, drizzle over the sherry vinaigrette, and sprinkle with grated manchego cheese before serving.
