Pat dry and season
Pat the perch fillets dry with paper towels; moisture prevents good browning. Lightly season both sides with kosher salt, black pepper, paprika, and garlic powder. Let rest at room temperature for 5–10 minutes while you prepare the breading station.

Set up breading station
Place the flour and cornmeal mix in a shallow dish and mix to combine. In a second shallow bowl, whisk the egg with the milk until blended. In a third shallow dish, spread the panko breadcrumbs.

Dredge fillets
Working one at a time, lightly dredge each seasoned fillet in the flour/cornmeal mixture, shaking off excess. Dip into the egg wash, letting excess drip off, then press into the panko breadcrumbs to coat evenly. Place breaded fillets on a wire rack or plate. If fillets are thick, press gently to ensure crumbs adhere well.

Pan-fry the fillets
Add the breaded perch to the pan in a single layer without crowding (work in batches if necessary). Cook undisturbed for 2–3 minutes until the underside is golden brown. Carefully flip with a spatula and cook the other side 1.5–3 minutes until golden and the fish flakes easily with a fork. Total cook time depends on fillet thickness; internal temperature should reach 145°F (63°C).
