Lobster stock & shells

    Bring a large pot of heavily salted water to a rolling boil. Add the live lobsters and cook 6–8 minutes until shells are bright red and meat is just cooked. Remove lobsters and cool slightly. Reserve cooking liquid if desired for added depth (optional). Remove meat from tails and claws; reserve 1 cup chopped lobster meat for the bisque and set aside chilled. Crack shells and place shells and heads in the pot.

    In the same pot over medium heat, melt 2 tbs butter. Add chopped carrot, onion and celery and sweat until softened and beginning to color, 6–8 minutes.

    Add tomato paste and smashed garlic; stir and cook 2–3 minutes until tomato paste darkens. Add cognac/brandy and carefully flambé or boil off alcohol for 30–60 seconds.

    Pour in white wine and simmer 2–3 minutes to reduce slightly. Add 8 cups water (or reserved cooking liquid if used), bay leaves, peppercorns, thyme and 1 tsp salt. Bring to a gentle simmer and cook, uncovered, 35–45 minutes to extract flavor from shells.

    Strain stock through a fine-mesh sieve into a clean pot or bowl, pressing shells to extract liquid. Discard solids. If stock seems thin, simmer to reduce to about 6 cups for a concentrated flavor. Keep hot.

Bisque body & finishing

    In a heavy saucepan over medium heat, melt 3 tbs butter. Add finely diced shallots and cook gently until translucent and soft, 4–5 minutes. Add diced tomato and cook 2–3 minutes.

    Sprinkle in 3 tbs flour and stir to make a light roux with the shallots and tomato. Cook, stirring, 2–3 minutes to cook off raw flour taste but do not let it brown excessively.

    Ladle 1–2 cups of the hot lobster stock into the pan, whisking constantly to make a smooth paste, then gradually whisk in another 3–4 cups of stock until incorporated and smooth. Bring to a gentle simmer and cook 8–10 minutes to thicken and meld flavors.

    Using an immersion blender (or in batches in a blender), blend the soup until silky smooth. Return to the pot and strain through a fine-mesh sieve or chinois for an extra-smooth bisque.

    Stir in 1 cup heavy cream and 1 cup (or adjusted amount) of concentrated stock if further adjustment needed. Simmer gently—do not boil—while tasting for seasoning. Adjust salt (about 1 tsp), white or black pepper (about 1 tsp) and 1 tsp lemon juice to brighten the flavor.

    Add the reserved chopped lobster meat to the bisque to warm through for 1–2 minutes. Remove from heat.

    Finish with Sherry and Crème Fraîche

    Stir in 1 cup dry sherry gradually, tasting as you go until desired sherry presence is achieved; use less if you prefer a subtler note. Whisk in 1 tbs crème fraîche for creaminess and a slight tang.

Sherry crème fraîche drizzle

    In a small bowl, combine 3 tbs crème fraîche with 1 tsp dry sherry, 1/4 tsp salt and a pinch (1/8 tsp) white pepper. Whisk until smooth. Place in a small squeeze bottle or spoon for drizzling.

    To serve, ladle bisque into warmed bowls. Spoon reserved lobster meat pieces into each bowl. Drizzle a small spoonful or decorative dots of the sherry crème fraîche across the surface and lightly swirl with a skewer or spoon for a marbled look. Garnish with chopped chives.
