Calamari

Calamari Prep

    If not pre-cut, slice cleaned calamari tubes into 1/2" rings and set tentacles whole. Pat all pieces dry with paper towels. Season lightly with 1 tsp kosher salt and 1 tsp freshly ground black pepper; let rest 5 minutes.

    Slice the mild green pepper into 1/4" rings, separate any seeds (leave some pith for mild flavor). Pat dry and set aside with the calamari.

Breading & Wet Coating

    In a large shallow bowl or rimmed plate, whisk together the all-purpose flour, cornstarch, optional breadcrumbs, baking powder, paprika, garlic powder, 1/2 tsp salt, and 1/4 tsp pepper until evenly combined.

    In a separate bowl, whisk the beaten egg with 1/2 cup cold club soda (or sparkling water) to make a light batter. The carbonation keeps the coating airy and prevents over-absorption of oil.

    Set up a dredge station: calamari and pepper rings to the side, the wet batter in one bowl and the dry mix in another. Working in batches (do not overcrowd), dip a few calamari rings and a couple pepper rings into the wet batter, letting excess drip off for 3–5 seconds, then transfer to the dry mix and toss briefly to coat evenly. Place coated pieces on a wire rack while heating oil. Make sure every piece is coated — the dry mix helps achieve the flash-fried crisp.

Frying

    Pour oil into a deep, heavy pot or deep fryer to a depth of about 2–3 inches (enough for shallow-deep frying). Heat oil to 350°F (175°C). If you don't have a thermometer, test with a small pinch of the dry mix: it should sizzle immediately and brown in ~30–45 seconds.

    Fry coated calamari and pepper rings in small batches (about 6–8 pieces depending on pot size) for 45–60 seconds, turning once — the goal is a golden, lightly blistered exterior but tender interior. Tentacles may take a few seconds longer; remove when golden. Do not overcook; calamari cooks very quickly.

    Use a slotted spoon or spider to transfer fried pieces to a wire rack set over a baking sheet (not paper towels) to keep crisp. Lightly season with a pinch of salt immediately after frying. Keep finished batches warm in a 200°F (95°C) oven while you finish remaining batches.

Lemon Caper Aioli

    While oil heats, combine mayonnaise, chopped capers, lemon juice, lemon zest, minced garlic, Dijon mustard, and olive oil in a small bowl. Whisk until smooth and emulsified. Taste and adjust with 1/4 tsp more salt or additional lemon juice if desired. Refrigerate until ready to serve.

Finish & Serve

    Arrange flash fried calamari and pepper rings on a warm platter. Garnish with lemon wedges on the side. Serve immediately with the lemon caper aioli for dipping.

    Suggested serving: provide extra lemon wedges and a small bowl of aioli per 2–3 people. Leftover fried calamari will lose crispness — reheat briefly in a 375°F (190°C) oven for 4–6 minutes if needed.
