Bring 4 liters (about 16 cups) of water to a rolling boil in a large pot. Add 2 tablespoons coarse salt once boiling.

Add 12 oz dried spaghetti to the boiling water, stir immediately to prevent sticking, and cook uncovered, stirring occasionally, until al dente (check package but typically 8–10 minutes). Reserve 1 cup of the starchy pasta cooking water, then drain the pasta in a colander.
Sauce

While the pasta cooks, heat 2 tablespoons olive oil in a large skillet over medium heat until shimmering.

Add 1 cup finely chopped onion and cook, stirring occasionally, until softened and translucent, about 5–7 minutes.

Add 3 minced garlic cloves and cook for 30–60 seconds until fragrant but not browned.

Stir in 2 tablespoons tomato paste and cook 1–2 minutes to caramelize slightly, which deepens flavor.

Pour in one 28 oz can crushed tomatoes. Add 1 tsp dried oregano, 1 tsp dried basil, 1/2 tsp sugar, 1 tsp kosher salt, 1/2 tsp freshly ground black pepper, and 1/4 tsp red pepper flakes if using. Stir to combine.

Bring sauce to a gentle simmer, reduce heat to low, and simmer uncovered for 10–15 minutes, stirring occasionally, to meld flavors and slightly thicken. Taste and adjust seasoning (salt, pepper, sugar) as needed.

When sauce is nearly ready and pasta has been drained, add 1 tablespoon unsalted butter to the sauce and stir until melted. If sauce is too thick, add up to 1/2 cup of the reserved pasta water, a few tablespoons at a time, until desired consistency is reached.

Return drained spaghetti to the pot (off heat) or add directly to the skillet with the sauce. Toss to coat thoroughly—use tongs to lift and mix so each strand is coated. If needed, add more reserved pasta water a tablespoon at a time to help the sauce cling.

Stir in 1 teaspoon olive oil and 3/4 cup grated Parmesan cheese, reserving a little cheese for serving. Fold in 1/4 cup torn fresh basil if using.

Divide spaghetti among 4 plates (serves 4). Top with additional grated Parmesan and an extra drizzle of olive oil if desired. Serve immediately.
