    Cook bacon

    Preheat oven to 400°F (200°C). Line a rimmed baking sheet with foil and place a wire rack on top if available. Lay bacon slices in a single layer on the rack or directly on the foil. Bake for 12–18 minutes, turning once if not using a rack, until bacon is crisp and browned to your liking. Remove and transfer to a paper towel–lined plate to drain and cool. Once cool, crumble or chop into 1/2–1 inch pieces.

Blue Cheese Dressing

    Make dressing

    In a medium bowl, whisk together mayonnaise, sour cream, and buttermilk until smooth. Add the 2 oz crumbled blue cheese, lemon juice, Dijon mustard, Worcestershire sauce, minced garlic, salt, and pepper. Stir gently to combine, leaving some blue cheese crumbles whole for texture. Taste and adjust seasoning or thickness — add more buttermilk if you want a thinner dressing. Chill in the refrigerator for at least 15 minutes to let flavors meld.

    Prepare romaine

    Remove any damaged outer leaves from romaine heads. Cut each head lengthwise through the stem to create 4 wedges (for two heads you’ll have 4 wedges total if halved, adjust to desired wedge size). Rinse the wedges briefly under cold water, shake or spin to remove excess moisture, and pat dry thoroughly with paper towels so dressing adheres.

    Prepare tomatoes

    Halve the cherry tomatoes lengthwise (or leave whole if small) and season lightly with a pinch of salt.

    Plate wedges

    Place each romaine wedge on individual plates or a large serving platter with the cut side up so leaves fan slightly.

    Dress and finish

    Spoon 2–3 tablespoons of the blue cheese dressing over each wedge, allowing some to run into the leaves. Scatter crumbled bacon evenly over wedges, followed by the 3 oz crumbled blue cheese and the halved cherry tomatoes. Sprinkle with the measured kosher salt (or less to taste) and coarse black pepper. Garnish with chopped fresh chives if using.
