    Prep the calamari

    If using whole squid, clean and slice into 1/2-inch rings. If using pre-sliced rings, pat them dry thoroughly using paper towels. Place calamari in a bowl and toss with lemon juice, 1 tsp fine sea salt, and 1/2 tsp black pepper. Let sit 10 minutes while you prepare the breading—this brightens flavor and helps a light adhesion.

Breading

    In a shallow wide bowl or rimmed plate, combine 1 cup all-purpose flour, 1/2 cup fine cornmeal or panko, 1 tsp salt, 1/2 tsp black pepper, 1/2 tsp garlic powder, 1/2 tsp paprika, and 2 tbsp grated parmesan. Whisk together until evenly distributed.

Wet Coating

    In a second shallow bowl, beat 2 large eggs with 1/2 cup whole milk or buttermilk until smooth. This creates the wet coating to help the breading adhere.

Breading & Rest

    Set up a breading station: calamari bowl, egg-milk bowl, and flour-cornmeal bowl. Working in batches so you do not overcrowd, take a handful of calamari rings, shake off excess moisture, dip into the egg-milk mixture to fully coat, then transfer to the flour mixture and toss to coat evenly. Press gently so the breading adheres. Place breaded rings on a wire rack set over a baking sheet. Repeat until all calamari are breaded. Let the breaded calamari rest on the rack 8–10 minutes—this helps the coating set and reduces falling off during frying.

Frying

    Pour about 3 cups neutral oil into a heavy-bottomed skillet or Dutch oven to reach roughly 1 to 1 1/2 inches deep. Heat over medium-high to reach 350°F (175°C). If you don't have a thermometer, test by dropping a small pinch of the breading into the oil: it should sizzle and rise steadily without burning.

    Fry the calamari in small batches (about 4–6 oz at a time) so the oil temperature remains steady. Fry for 1.5–2 minutes, stirring gently and flipping once, until golden brown and crisp. Avoid overcooking—the calamari should be tender, not rubbery.

    Using a slotted spoon or spider, remove fried calamari to a paper-towel-lined tray or a wire rack. Lightly season immediately with a small pinch of salt. Allow oil to return to 350°F between batches before adding the next batch.

Finish & Serve

    If using store-bought marinara, warm 1 cup gently in a small saucepan over low heat with 1/4 tsp red pepper flakes if desired. Transfer marinara to a shallow serving bowl. Arrange fried calamari on a platter around the sauce.

    Sprinkle the fried calamari with 2 tbsp grated parmesan and 1 tbsp chopped fresh parsley (if using). Serve immediately with lemon wedges placed alongside and the warmed marinara for dipping.
