Prep and build
Muddle mint
In a mixing glass or the bottom of a shaker, place 8 fresh mint leaves and 0.25 oz simple syrup. Gently muddle 6–8 times to release the mint oils—do not pulverize the leaves, just bruise them to avoid bitterness.
Add spirits and mixers
Add 1.5 oz aged rum, 0.5 oz orange curaçao, 0.75 oz fresh lime juice and 0.5 oz orgeat to the muddled mint. Add a handful of crushed ice (about 1/2 cup) to the shaker or mixing glass.
Shake
Cap the shaker and shake vigorously for 10–15 seconds to chill and combine ingredients.
Strain into glass
Fill a double-old fashioned or highball glass with crushed ice (about 1 cup). Fine-strain or double-strain the cocktail over the crushed ice, ensuring the muddled mint bits are mostly left behind. Top with 1 oz club soda to lift and lighten the drink.
Float dark rum
Carefully pour 0.5 oz dark rum over the back of a spoon onto the surface of the drink to create a dark rum float.
Finish and garnish
Add 2 dashes of Angostura bitters on the top of the crushed-ice surface. Slap a mint sprig between your hands to wake the oils and place it on the drink as garnish along with a lime wheel or wedge.
