Prepare lobster meat: If using whole cooked lobster tails or claws, remove meat from shells and chop into 1/2-inch pieces. Pat dry with paper towels to remove excess moisture.

Prepare vegetables: Thinly shred napa cabbage and carrot and thinly slice scallions. Place in a bowl and gently squeeze to remove excess moisture from the cabbage (but leave some moisture to help bind).

Combine aromatics and seasoning: In a small bowl, mix minced garlic, minced ginger, light soy sauce, sesame oil, and rice vinegar.

Mix filling: In a medium bowl, combine chopped lobster, shredded vegetables, scallions, the aromatics mixture, breadcrumbs (or panko), salt, and pepper. Fold gently until evenly combined. The breadcrumbs absorb extra moisture and help the filling hold together; if mixture seems too wet, add another teaspoon of breadcrumbs.

Prepare flour paste: Whisk together 2 tablespoons flour and 2 tablespoons water in a small bowl until smooth; this acts as the glue to seal the rolls.

Set up assembly station: On a clean work surface place a stack of spring roll wrappers covered with a damp kitchen towel to keep them pliable. Keep the filling bowl and paste within reach.

Portion filling: Scoop about 1 tablespoon of the lobster filling (heaping) into the center near the edge of each wrapper nearest you. Do not overfill—about 1 tablespoon yields a tidy roll; larger wrappers can take 1.5 tablespoons.

Fold and roll: Brush a thin line of flour paste along the far edge of the wrapper. Fold the near edge over the filling, then fold both sides in to encase the filling, and roll tightly away from you to form a sealed cylinder. Press seam gently to adhere. Repeat with remaining wrappers and filling. You should get about 10–12 rolls depending on wrapper size and filling amount.

Frying

Heat oil: Pour neutral oil into a heavy skillet or shallow pot to a depth of about 1 to 1.5 inches (enough for shallow frying). Heat over medium-high until the oil reaches 350°F (175°C) or a small piece of wrapper sizzles and turns golden within ~15–20 seconds.

Fry rolls: Fry spring rolls in small batches (do not overcrowd) for 2 to 3 minutes per side, turning as needed, until evenly golden brown and crisp. Adjust heat as needed to maintain 325–350°F (160–175°C) so they cook through without burning.

Drain: Use a slotted spoon to transfer fried rolls to a paper-towel-lined rack or plate to drain. Let rest 1–2 minutes to crisp fully.

Mix sauce: Whisk together hoisin, Thai sweet chili sauce, and lime juice in a small bowl. Sprinkle with toasted sesame seeds. Taste and adjust: add more chili for heat or more lime for acidity.
