Soften and combine cheeses
Let the goat cheese and cream cheese sit at room temperature for 20–30 minutes so they're easy to blend. If short on time, microwave each cheese in a microwave-safe bowl on medium power in 7–10 second pulses until slightly softened but not melted.
Mix base ingredients
In a medium mixing bowl, add the softened goat cheese, softened cream cheese, sour cream, and 2 tablespoons whole milk. Using a sturdy spoon, rubber spatula, or hand mixer on low, beat until smooth and creamy, scraping the bowl sides. If mixture seems too thick, add additional milk 1 teaspoon at a time to reach a scoopable, slightly spreadable consistency.
Season the dip
Stir in 1 tablespoon extra-virgin olive oil, lemon zest, lemon juice, 1 teaspoon honey, minced garlic, and chopped fresh thyme. Taste and add salt and freshly ground black pepper. Start with 1 teaspoon salt, mix and taste, then add up to the full 3 teaspoons gradually—goat cheese can be salty, so adjust to preference. Mix until fully incorporated and smooth.
Chill briefly (optional)
For best flavor melding, cover the bowl and refrigerate the dip for at least 30 minutes. If serving immediately, proceed to plating.
Topping / Garnish
Prepare garnish: Transfer the chilled or room-temperature goat cheese dip to a shallow serving bowl. Make a slight well in the center with the back of a spoon.
Finish the dip: Drizzle 1 tablespoon extra-virgin olive oil into the well, then drizzle 1 teaspoon honey across the top. Sprinkle the toasted nuts over the dip, add a few sprigs or a sprinkle of chopped fresh thyme or parsley, and finish with a crack of black pepper (about 1/4 teaspoon).
For Serving
Serve: Place the finished goat cheese dip in the center of the platter. Serve at room temperature with the bread, crackers, and vegetables for scooping. Leftovers can be stored covered in the refrigerator for up to 4 days; stir before serving and bring to room temperature for 20 minutes.
