Chill glass

Place a martini coupe or chilled martini glass in the freezer for at least 5 minutes or fill with ice water while you prepare the cocktail.

Dry shake

Add white rum, coconut rum, vodka, cream of coconut, half-and-half, fresh lime juice, simple syrup, and aquafaba (or egg white) to a cocktail shaker with no ice. Seal and shake vigorously for 15–20 seconds. This 'dry shake' emulsifies the cream and aerates the aquafaba/egg white to create the cloud texture.

Wet shake

Open the shaker, add the cup of ice, reseal, and shake hard for 12–15 seconds until the shaker is very cold to the touch and the mixture is well chilled and frothy.

Double strain

Remove the chilled glass from the freezer (or dump ice water). Double-strain the cocktail into the glass through a fine mesh strainer (to remove ice shards and any large bubbles) to preserve a silky foam on top.

Garnish & Finish

Carefully spoon or float a small amount of toasted shredded coconut onto the foam, and finish with a lime wheel or twist on the rim. Serve immediately.
