Pickled Red Onion
Combine apple cider vinegar, water, sugar, and salt in a heatproof jar or bowl. Stir until sugar and salt dissolve.
Add thinly sliced red onion to the brine, pressing to submerge. Let sit at room temperature for at least 20 minutes; for best flavor refrigerate 1 hour to overnight. Drain before using.
Citrus Slaw
In a medium bowl whisk together mayonnaise, Greek yogurt, lime juice, honey, apple cider vinegar, salt, and black pepper until smooth.
Blackened Mahi Mahi
Pat mahi mahi fillets dry with paper towels. If fillets are large, cut into 8 pieces to match tortillas (about 3–4 oz each).
In a small bowl mix smoked paprika, ground cumin, dried oregano, garlic powder, onion powder, black pepper, kosher salt, and cayenne pepper to make the blackening spice.
Remove fish to a plate, squeeze 1 tablespoon fresh lime juice over the cooked pieces, and let rest 2 minutes. Flake into bite-sized pieces for tacos.
