For the Buffalo Fried Chicken

1. Marinate the chicken
Trim chicken into sandwich-sized cutlets (if using thighs, flatten slightly with a meat mallet to even thickness). Place chicken in a bowl with buttermilk and 2 tbs hot sauce. Cover and refrigerate 30 minutes to 4 hours (30 minutes is sufficient for flavor).

2. Prepare dredge and egg wash
In a shallow dish combine flour, cornstarch, paprika, garlic powder, onion powder, cayenne, 1 tsp salt and 1/2 tsp black pepper. In a separate shallow bowl whisk eggs with 2 tbs milk.

3. Preheat oil
Pour about 1"–1.5" of vegetable oil into a heavy skillet and heat over medium-high until oil reaches 350°F (175°C) or a small piece of bread sizzles and browns in ~45 seconds.

4. Dredge and fry
Remove chicken from marinade, letting excess drip off. Dip each piece into egg wash, then press into flour mixture so it's well coated. Shake off excess. Fry chicken in batches (do not crowd) 3–5 minutes per side until golden brown and internal temperature reaches 165°F (74°C). Transfer to a wire rack set over a sheet pan while you finish frying.

5. Toss in Buffalo sauce
Warm 1/2 cup Buffalo sauce (or combine 1/4 cup melted butter + 1/4 cup hot sauce) in a large bowl. Add fried chicken and toss to coat evenly. Keep warm in a low oven (200°F/95°C) while assembling sandwiches.
For the Sandwich and Chopped Caesar Salad

1. Prepare chopped Caesar salad
Chop romaine finely (aim for small bite-sized pieces) and transfer to a mixing bowl. Add 1/2 cup Caesar dressing, 1/4 cup grated Parmesan, 1/2 cup croutons broken into smaller pieces, 1/4 tsp salt and a pinch of black pepper. Toss until evenly coated. Taste and adjust seasoning.

3. Assemble the sandwiches
Place a generous handful (about 3/4 cup) of the chopped Caesar salad on the bottom half of each toasted bun. Top salad with a Buffalo-coated fried chicken piece. Add 1–2 tomato slices and a couple of torn romaine leaves for additional crunch if desired. Spoon 1–2 tbs ranch or bleu cheese onto the top bun (or serve on the side). Close sandwich and press lightly.

4. Serve
Cut sandwich in half if desired. Serve immediately while the chicken is hot, with extra ranch or bleu cheese on the side and any remaining chopped Caesar salad as a side accompaniment.
