    Heat oil and soften aromatics

    Place a medium saucepan over medium heat. Add olive oil and warm for 30 seconds. Add the finely diced onion and cook, stirring occasionally, until translucent and soft, about 5–7 minutes. Add the minced garlic and cook 30–45 seconds until fragrant, taking care not to brown it.

    Add tomato components

    Stir in the tomato paste and cook 1 minute to remove raw edge. Add the tomato passata (or strained tomatoes) and stir to combine. Bring the mixture to a gentle simmer.

    Season the sauce

    Add the dried oregano, dried basil, red pepper flakes, salt, and black pepper. Stir well to incorporate. Reduce heat to low so the sauce maintains a gentle simmer.

    Adjust flavor

    Taste after 10 minutes of simmering. If the acidity is sharp, stir in the optional sugar (about 1/2 tsp) a little at a time. Add the red wine or balsamic vinegar to deepen the flavor; simmer another 2 minutes to meld.

    Turn off the heat and stir in the chopped fresh basil if using. This brightens the sauce and adds freshness.

    Adjust thickness

    If the sauce is thicker than desired for 'extra sauce' use, stir in up to 1/4 cup water or stock, a tablespoon at a time, until you reach the preferred consistency.

    For a glossy, richer finish, swirl in 1 tablespoon of butter off the heat until melted and incorporated. Taste and correct seasoning with additional salt, pepper, or a pinch more sugar if needed.
