Prepare chicken
Trim any excess fat from the chicken breasts. Using a sharp knife, cut a deep pocket into the side of each breast without cutting through to the other side (create a pouch for the filling). Pat dry with paper towels.

Make marinade
In a bowl, whisk together 3 tbs olive oil, minced garlic, smoked paprika, ground cumin, dried oregano, salt, black pepper and lemon juice until combined.

Brush or spoon half of the marinade inside each chicken pocket and over the outside of each breast. Reserve the other half of the marinade to baste later. Let the chicken sit at room temperature for 15 minutes or refrigerate up to 2 hours covered.

Prepare filling
In a medium bowl, combine softened cream cheese, shredded cheddar, chopped cooked bacon, sliced green onions, hot sauce (if using) and 1/4 tsp black pepper. Mix until smooth and evenly distributed.

Using a spoon, divide the filling into four equal portions and pack each portion into the pocket of each chicken breast. Do not overstuff; leave a small seam to be sealed.

If necessary, use toothpicks to close the pocket. Lightly dredge each stuffed breast in the all-purpose flour, shaking off excess.

Egg wash
Beat the 2 eggs in a shallow bowl. Dip each floured chicken breast into the beaten eggs, coating fully.

Breadcrumb coating
Combine panko breadcrumbs and grated Parmesan in a shallow dish with 1/2 tsp salt and 1/4 tsp black pepper. Press each egg-coated breast into the panko mixture, pressing gently so crumbs adhere and the breast is fully covered.

Fry or bake
For pan-frying: heat about 1 cup vegetable oil in a large skillet over medium heat until shimmering (approx. 350°F / 175°C if using a thermometer). Add the breasts carefully and fry 3–4 minutes per side until golden brown, then lower heat and cook another 6–8 minutes, turning occasionally, until internal temperature reaches 165°F (74°C). For oven-finish: after browning 2 minutes per side in the skillet, transfer to a 400°F (200°C) oven for 12–15 minutes until internal temp is 165°F.

Rest and garnish
Transfer cooked Chicken Bombs to a paper-towel-lined plate to drain briefly, then rest 5 minutes to let juices settle and filling set. Remove any toothpicks, sprinkle with chopped fresh parsley and serve immediately with reserved marinade warmed as a drizzle or your favorite dipping sauce.
