Prep glassware and mint

Place two highball or Collins glasses in the freezer for 5 minutes to chill (optional). While glasses chill, pick 8 fresh mint leaves and rinse briefly. Reserve 2 whole sprigs for garnish and separate the remaining leaves for muddling.

Muddle mint and sweetener

Divide the 15 ml simple syrup between the two glasses (about 7.5 ml per glass). Add 4 mint leaves to each glass. Using a muddler or the back of a spoon, gently press the mint leaves 3–4 times to release oils — avoid shredding the leaves to prevent bitterness.

Add citrus

Pour 15 ml fresh lime juice into each glass (total 30 ml for both). Stir gently to combine the lime juice with the muddled mint and syrup.

Ice and pour beverage

Fill each glass with crushed ice (about 1 cup per glass). Slowly pour 250 ml Coca‑Cola Zero Sugar into each glass (total 500 ml). Pour gently to preserve carbonation.

Finish and balance

If using, add 1 dash of Angostura bitters to each glass to add aromatic depth. Give each drink a gentle stir (1–2 turns) to incorporate but not flatten the soda. Taste and adjust: add up to 5 ml more simple syrup per glass if you prefer sweeter, or a small additional squeeze of lime if you want more acidity.

Garnish and serve

Garnish each drink with a lime wheel or wedge on the rim and a mint sprig. Serve immediately with a straw or stirring spoon.
