Shuck and season oysters

If oysters are not already shucked, carefully shuck and drain them, preserving as much liquid as possible then pat dry lightly with paper towels. Place oysters on a plate and sprinkle with 1 tsp sea salt and 1/2 tsp black pepper. Set aside on a tray in a single layer while you prepare breading and sauce. Cut lemon into wedges for serving.

Prepare dry mixes

In a shallow bowl combine the all-purpose flour, cornstarch, and baking powder. In a separate shallow dish mix panko breadcrumbs with the optional fine dry breadcrumbs (if using) and add 1/2 tsp salt and 1/4 tsp black pepper; toss to distribute.

Make wet batter

In a third bowl whisk the 2 eggs and 1/2 cup cold water until blended and slightly frothy. The batter should be thin but able to coat the oysters; adjust with a tablespoon more water or flour if needed.

Breading sequence

Set up a breading station: flour mix, egg batter, and panko mix. Working with one oyster at a time, dredge the oyster lightly in the flour mix, shaking off excess, dip into the egg batter letting excess drip, then press into the panko mixture to thoroughly coat. Place each breaded oyster on a rack or tray. Repeat until all oysters are breaded.

Chill briefly (optional)

For a crisper crust, chill the breaded oysters on a rack in the refrigerator for 10–15 minutes to help the coating set.

Frying

Heat oil

Pour about 2 cups neutral frying oil into a heavy-bottomed skillet or saucepan to a depth of about 1 to 1.5 inches, or use a deep fryer. Heat oil over medium-high heat to 350°F (175°C). If you do not have a thermometer, test by dropping a small piece of breading into the oil — it should sizzle and brown in about 45–60 seconds.

Fry oysters

Carefully add the breaded oysters in a single layer without crowding (work in batches if needed). Fry for 2 to 3 minutes per side, turning once, until golden brown and the internal oyster is cooked through. Use a slotted spoon or tongs to transfer fried oysters to a paper towel-lined tray or a wire rack to drain excess oil.

Keep warm

If frying in batches, keep finished oysters warm on a baking sheet in a 200°F (95°C) oven while you finish the rest.

Sauce & Assembly

Make dipping sauce

In a small bowl whisk together 1/2 cup mayonnaise, 2 tbsp ketchup, 1 tsp mustard, 1/2 tsp Worcestershire sauce, and 1/2 tsp hot sauce (if using). Stir in the thinly sliced scallions. Taste and adjust seasoning — add a pinch of salt or a squeeze of lemon if desired.

Prepare bento components

Divide the 2 cups steamed rice between bento boxes or plates. Place about 1 cup shredded cabbage beside the rice as a bed for the oysters. Add pickled ginger to a small compartment or alongside, if using.

Assemble Oyster Bento

Arrange 6 fried oysters on the shredded cabbage per serving (12 oysters total yields 2 servings). Place a wedge of lemon for each portion and a small container of the prepared sauce. Garnish with a few extra sliced scallions over the oysters if desired.

Serve

Serve immediately while oysters are hot and crispy. Suggestion: eat by dipping oysters into the sauce and squeezing lemon over the top.
