Prepare octopus

If using pre-boiled octopus, rinse under cold water and pat dry. Trim any tough tips and slice crosswise into approximately 1/4-inch (6 mm) pieces. Aim for bite-sized, uniform slices for even marination and texture.

Make wasabi marinade

In a bowl, combine wasabi paste, soy sauce, mirin, rice vinegar, toasted sesame oil, sugar, grated ginger, and minced garlic. Whisk until sugar dissolves and mixture is homogeneous. Taste and adjust: add up to 1/2 tsp additional wasabi for more heat, or 1/2 tsp more sugar if too sharp.

Marinate octopus

Place the sliced octopus in a shallow non-reactive container or resealable bag. Pour the wasabi marinade over the octopus, ensuring pieces are evenly coated. Seal or cover and refrigerate for at least 30 minutes and up to 4 hours. Short marination (30–60 min) preserves a firmer texture and fresher flavor; longer (up to 4 hrs) allows deeper infusion of wasabi and aromatics.

Adjust seasoning

After marinating, taste one piece (or a small spoonful of marinade) and adjust salt if needed—add up to 1/4 tsp kosher salt to the marinade and gently toss to combine. If marinade is too thin, remove octopus and reduce marinade in a small saucepan over low heat for 1–2 minutes, then cool and toss back with octopus.

Garnish & Serve

Transfer marinated octopus to a serving plate or small bowls using tongs or chopsticks so excess marinade drains back into the container.

Sprinkle thinly sliced green onion and toasted sesame seeds evenly over the octopus. Add thinly sliced shiso leaves if using for herbal brightness.

Serve chilled or at cool room temperature with a lemon or yuzu wedge on the side for diners to squeeze lightly, if desired. Takowasa is typically served as a small appetizer or izakaya-style snack — present in small portions.

Store any leftover marinated octopus in an airtight container in the refrigerator and consume within 24–36 hours for best quality. Discard if it develops off-odors or slime.
