Hamburg Patties
Soak panko
Place panko in a small bowl and pour milk over it. Let soak 5 minutes until moistened.
Mix and shape patties
In a large bowl combine ground beef, soaked panko (including any excess milk), cooled sautéed onion, egg, 1 tablespoon soy sauce, 1 teaspoon salt, and 1 teaspoon black pepper. Use your hands to mix gently until just combined—avoid overworking. Divide mixture into 4 equal portions (about 125 g each). Shape each portion into an oval patty about 1.5 cm thick, creating a slight dimple in the center to prevent doming.
Pan-fry
Heat a skillet over medium heat and add 2 teaspoons vegetable oil. When hot, add patties seam side down. Cook 3–4 minutes until nicely browned, then flip and reduce heat to medium-low. Cover and cook 6–8 minutes more until internal temperature reaches 71°C (160°F) or patties are cooked through. Remove patties to a plate and tent with foil to rest while you make the sauce.
Sauce (demi-style sweet soy)
Wipe out the skillet if it has excess solids, leaving any browned bits. Over medium heat add ketchup, 2 tablespoons soy sauce, mirin, red wine (or 2 tablespoons water), and brown sugar. Stir to combine and bring to a gentle simmer, scraping up browned bits from the pan. Let simmer 1–2 minutes to thicken slightly.
Bento sides & assembly
Rice: If rice is freshly cooked, fluff with a rice paddle and sprinkle 1/4 teaspoon salt and 1 teaspoon sesame seeds, mixing lightly. Portion 2 cups cooked rice between two bento compartments or two boxes (about 1 cup each) or place in one lunchbox alongside steaks.
Vegetables: If broccoli and carrots are not yet blanched, bring a pot of salted water to a boil and blanch broccoli florets for 1–2 minutes and carrot slices for 1–2 minutes until bright and just tender. Shock in ice water, then drain and pat dry. Arrange 1/2 cup broccoli and 1/4 cup carrot per bento. Add 3 cherry tomatoes per box and about 15 g pickled ginger or tsukemono as a palate cleanser if using.
Place two hamburg steaks over or beside the rice in each bento compartment and drizzle additional sauce from the pan over the steaks (reserve any extra sauce in a small container if packing for later). Garnish rice with sesame seeds. Close bento tightly; if not eating immediately, allow the hot items to cool slightly before sealing to avoid condensation.
