Method
Prepare eel and seasoning
Pat and season
Rinse eel fillets briefly under cold water and pat dry thoroughly with paper towels. Lightly score the skin side in a crosshatch pattern (do not cut through flesh) to help render fat and prevent curling. Season both sides evenly with kosher salt and freshly ground black pepper. Let rest at room temperature for 10 minutes.
Make the special sauce
Combine sauce ingredients
In a small saucepan combine soy sauce, mirin, brown sugar, sake, rice vinegar, grated ginger, minced garlic, and sesame oil. Stir to dissolve the sugar.
Simmer and reduce
Bring the mixture to a gentle simmer over medium heat and cook, stirring occasionally, until slightly reduced and fragrant, about 4–6 minutes.
Thicken with slurry
Mix cornstarch with cold water to form a smooth slurry. Gradually whisk the slurry into the simmering sauce. Continue cooking and whisking until the sauce thickens to a glossy glaze that coats the back of a spoon, about 1–2 minutes. Remove from heat and set aside. The sauce will thicken slightly more as it cools.
Grill and glaze
Flip and baste
Flip the fillets and immediately brush a generous layer of the special sauce onto the cooked side. Continue cooking the fillets on the flesh side for 1–2 minutes, then flip back skin-side up and brush again with sauce. Repeat once more if fillets are thick, cooking until the eel is opaque through and reaches an internal temperature of 135–145°F (57–63°C), about 1–3 additional minutes total. Avoid overcooking — eel is tender and should remain moist.
Final glaze
During the last 30–60 seconds, brush a final thin coat of sauce on each fillet and let it caramelize lightly but not burn. Remove fillets from heat and let rest for 2 minutes.
Plate and garnish
Transfer grilled eel fillets to serving plates. Spoon any remaining warm sauce over the top (reserve a small amount for the table if desired). Sprinkle with sliced scallions and toasted sesame seeds. Serve with lemon wedges and optional pickled ginger or cucumber slices on the side.
