Assemble drink
Fill a tall glass with ice cubes. Pour 1 cup of chilled Coca‑Cola (storebought) or 1 cup of diluted homemade cola over the ice. Stir gently to chill and combine.
Garnish with a lime wedge on the rim or squeezed into the drink if desired. Serve immediately.
If making a quick homemade cola syrup
Make spice-sugar base
Combine 2 cups water, 1 cup granulated sugar and 1 cup brown sugar in a medium saucepan over medium heat. Stir until sugars dissolve and mixture comes to a gentle simmer.
Add zests and spices
Add the lime, orange and lemon zests, 1/2 tsp ground cinnamon, 1 star anise, 1/2 tsp coriander seeds and 2 crushed cardamom pods to the saucepan. Maintain a gentle simmer for 10 minutes so the citrus oils and spice flavors infuse the syrup.
Strain and finish syrup
Remove from heat and let sit 10 minutes to further infuse. Stir in 1 tsp vanilla extract, 1/2 tsp citric acid (or 1 tbsp fresh lemon juice) and 1/2 tsp caramel color or a pinch of burnt sugar for color. Strain the mixture through a fine mesh sieve or cheesecloth into a clean container to remove solids. Taste and adjust acidity (citric acid/lemon) or sweetness as desired.
Chill syrup
Allow the syrup to cool to room temperature, then refrigerate until cold. The syrup will keep in the refrigerator for up to 2 weeks in a sealed container.
Dilute syrup to make cola
To serve, combine 1 part chilled syrup with 4 parts chilled carbonated water (for example, 1/2 cup syrup + 2 cups carbonated water) into a glass with ice. Stir gently to combine, taste, and adjust ratio if you prefer sweeter or stronger cola.
Garnish and serve
Garnish with a lime wedge if desired and serve immediately. One batch of syrup (above) yields about 4 cups syrup, which dilutes with 4 cups carbonated water to make approximately four 1‑cup servings.
