Prepare and pound

Trim any excess fat from the chicken breasts. Place each breast between two pieces of plastic wrap or in a large zipper bag and gently pound with a meat mallet or rolling pin until about 1/2 inch (1.2 cm) thick and even. This ensures quick, even cooking.

Season

Season both sides of the flattened chicken breasts with the kosher salt and black pepper, rubbing lightly so seasoning adheres.

Set up breading station

Arrange three shallow dishes: one with the all-purpose flour, one with the beaten eggs mixed with milk, and one with the panko breadcrumbs. Lightly season the flour with a pinch of salt and pepper.

Dredge

Working one piece at a time, coat the chicken first in flour (shake off excess), then dip into the egg mixture ensuring full coverage, and finally press firmly into the panko breadcrumbs so they adhere well. Place breaded cutlets on a wire rack and let rest 10 minutes — this helps the crust set and reduces fall-off during frying.

Heat oil

In a heavy skillet (cast iron or stainless) or a shallow frying pan, pour enough vegetable and neutral oil to reach about 1/4–1/2 inch depth. Heat over medium-high until the oil reaches 350°F (175°C) or until a small piece of breadcrumb sizzles immediately but does not burn. If you don't have a thermometer, maintain a steady medium-high heat and test with a breadcrumb.

Fry

Carefully lay the breaded cutlets into the hot oil, working in batches if needed so pieces do not touch. Fry 3–4 minutes per side until the panko is deep golden brown and an instant-read thermometer inserted into the thickest part reads 165°F (74°C). Adjust heat as necessary to prevent over-browning.

Drain and rest

Transfer cooked katsu to a wire rack set over a baking sheet or to a plate lined with paper towels to drain excess oil. Let rest 3–5 minutes before slicing. Slice into 1/2-inch strips across the grain for serving.

Tonkatsu Sauce

Whisk together ketchup, Worcestershire sauce, soy sauce, mirin (or rice vinegar), brown sugar, and Dijon mustard in a small bowl until smooth and sugar dissolves. Taste and adjust — add a little more brown sugar if you prefer sweeter sauce or more Worcestershire for tang. Refrigerate until ready to serve; it can be made up to 3 days ahead.

Cook rice

Rinse the short-grain rice under cold water until the water runs mostly clear. Combine rinsed rice and 1.1 cups water in a small saucepan with a pinch of salt. Bring to a gentle boil, then reduce heat to low, cover, and simmer 15 minutes. Remove from heat and let steam, covered, for another 10 minutes. Fluff with a fork and stir in rice vinegar. Keep warm.

Prep cabbage and garnish

While the rice cooks and the chicken rests, shred cabbage finely and place in a bowl. Toss with a tiny pinch of salt or leave plain. Slice lemons into wedges. If using, toast sesame seeds briefly in a dry pan until fragrant.

Assemble bento

Place a portion of rice in the bento or plate, lay shredded cabbage beside it, and arrange sliced chicken katsu over or beside the cabbage. Drizzle or serve tonkatsu sauce on the side for dipping. Garnish with lemon wedges, a sprinkle of sesame seeds, and sliced scallions if using.
