Prepare shrimp
Pat shrimp dry with paper towels. If shrimp have tails, leave tails on for presentation or discard per preference. Lightly season shrimp with 1/4 tsp salt and 1/8 tsp black pepper.
Make batter and breading station
In a shallow bowl whisk the egg with 1/4 cup cold water until combined. Put the flour in a separate shallow bowl and season with remaining 3/4 tsp salt and 3/8 tsp black pepper. Place panko breadcrumbs in a third bowl.
Coat shrimp
Dredge each shrimp first in the seasoned flour, shaking off excess, then dip into the egg wash, then press into the panko to fully coat. Repeat until all shrimp are breaded. Set on a tray while you heat the oil.
Fry shrimp
Heat vegetable oil in a heavy skillet or pot to 350°F (175°C). If you don't have a thermometer, test with a small piece of bread — it should brown in about 60 seconds. Fry shrimp in batches (do not crowd) for 2–3 minutes until golden brown and cooked through. Remove and drain on a paper towel-lined tray. Keep warm.
Prepare cream cheese base
While the shrimp are hot, spread approximately 1/3 ounce (about 1 tablespoon) of softened cream cheese on the top of each fried shrimp (or piped small dollop). The warmth of the shrimp slightly softens the cream cheese so it adheres.
Special crab mix (topping)
Make the crab mix: In a bowl combine the finely chopped imitation crab, 3 tablespoons mayonnaise, 1 tablespoon Sriracha, 1/2 teaspoon sesame oil, 1/2 teaspoon soy sauce, 1 tablespoon thinly sliced green onion, toasted sesame seeds, and 1/4 tsp kosher salt. Taste and adjust heat or seasoning as desired. The mixture should be creamy but hold together enough to mound.
Spoon or pipe topping: Using a small spoon, place a small generous mound (about 1 tablespoon) of the special crab mix on top of the cream cheese-topped shrimp. Press lightly so it adheres, creating the characteristic 'volcano' mound.
Finishing & garnish
Finish with glaze: Drizzle a small amount (about 1/2 tsp) of unagi sauce over each volcano, or brush the tops lightly to add shine and sweet-salty flavor.
Optional torch/heat step: If you want a slightly caramelized finish, briefly use a culinary torch to brown the crab mixture and cream cheese for 5–10 seconds per piece, moving continuously so it doesn't burn. Alternatively, place under a very hot broiler for 30–45 seconds on a tray — watch closely.
Plate and garnish: Arrange the volcano shrimp on a serving plate. Drizzle with chili mayonnaise (optional) in a decorative pattern, sprinkle additional sliced scallions and pickled ginger on the side. Serve immediately while warm.
