Preparation of the Egg Mixture

Beat the Eggs

In a mixing bowl, crack the 4 eggs and whisk them thoroughly until the yolks and whites are fully combined.

Add Sweeteners

Add 3 tablespoons of sugar, 2 tablespoons of mirin, 1 teaspoon of soy sauce, and 1 teaspoon of salt to the beaten eggs. Whisk until all ingredients are well incorporated and the sugar is dissolved.

Heat the Pan

In a non-stick frying pan, heat 1 tablespoon of vegetable oil over medium-low heat. Ensure the oil is evenly spread across the pan.

Cook the Egg Mixture

Pour a thin layer of the egg mixture into the heated pan. Swirl to coat the bottom of the pan evenly. Allow it to cook for about 1-2 minutes or until the edges begin to set but the center is still slightly runny.

Roll the Tamago

Using a spatula, carefully roll the cooked egg towards the far side of the pan. Once rolled, push the rolled egg to the side of the pan.

Repeat the Process

Add another thin layer of the egg mixture to the pan, lifting the rolled egg so the new layer flows underneath. Cook until set and then roll the first egg roll into the new layer. Repeat this process until all the egg mixture is used.

Shape the Tamago

Once all the mixture is cooked and rolled, remove the Tamago from the pan and shape it using a bamboo mat or by hand to get a rectangular form.

Slice and Serve

Allow the Tamago to cool slightly before slicing into pieces. Serve warm or at room temperature.
