Fresh strawberries

Method

Fresh strawberries

1

Wash and hull

Rinse the strawberries under cold running water in a colander for about 20–30 seconds to remove dirt. Gently pat them dry on a clean kitchen towel or paper towels. Remove the green caps (hulls) by slicing off the top with a paring knife or using a hulling tool; leave them whole, halved, or sliced depending on preference.

2

Macreate (macerate) with sugar and lemon

Place the prepared strawberries in a medium bowl. Sprinkle the 1 tablespoon granulated sugar evenly over the berries and drizzle the 1 tablespoon lemon juice on top. Gently toss several times to coat. Let sit at room temperature for 15–20 minutes so the strawberries release their juices and become slightly syrupy. Stir once or twice during this time to ensure even maceration.

Optional serving & finishing

3

Assemble simple serving

After maceration, taste a strawberry and adjust sweetness if desired. If you want it sweeter, drizzle up to 1 teaspoon honey or maple syrup and toss gently. Transfer strawberries (and any syrup) to a serving bowl or divide among 4 small bowls. Spoon whipped cream or Greek yogurt alongside or over the berries (about 1/4 cup per serving). Garnish with mint leaves and a sprinkle of coarse sugar for a sparkling finish if using.

4

Storage

Store any leftover macerated strawberries in an airtight container in the refrigerator for up to 48 hours. Give them a gentle stir before serving; the texture will soften over time. Do not freeze macerated strawberries if you want to preserve the fresh texture.
