Infuse milk and cream

In a medium saucepan, combine 1 cup whole milk and 1 cup heavy cream with 1 cup packed fresh mint leaves and 2 tablespoons unsweetened cocoa powder. Warm over medium heat until it just begins to steam and small bubbles form around the edges (do not boil), about 5–7 minutes. Stir to dissolve the cocoa. Remove from heat, cover, and let steep for 20 minutes to infuse mint flavor.

Prepare egg custard

While the milk infuses, whisk together 3 egg yolks in a medium bowl with 3 tablespoons granulated erythritol and 1 tablespoon powdered erythritol (if using) until pale and slightly thickened, about 1–2 minutes.

Temper eggs

After steeping, strain the milk-cream mixture through a fine-mesh sieve into the saucepan to remove mint leaves, pressing gently on leaves to extract flavor. Rewarm the strained mixture over medium until it is hot but not boiling (small bubbles). Slowly drizzle about 1/2 cup of the hot milk into the egg yolk mixture while whisking constantly to temper the eggs. Continue adding hot milk in a slow stream until about half of the milk mixture has been incorporated.

Cook custard

Return the tempered egg-milk mixture to the saucepan with the remaining milk-cream. Cook over low to medium-low heat, stirring constantly with a heatproof spatula or wooden spoon, scraping the bottom, until the custard thickens enough to coat the back of the spoon (nape), about 5–8 minutes. Do not let it boil or the eggs will scramble. If using a thermometer, target 170–175°F (77–80°C).

Finish base

Remove the pan from heat. Whisk in 1 teaspoon vanilla extract and a pinch of fine salt. Stir in 1 teaspoon peppermint extract (or start with 1/2 tsp if you prefer milder mint) and taste; adjust peppermint extract in small increments (to taste) because it is potent. If the base has any graininess from erythritol, blend briefly with an immersion blender for 20–30 seconds to smooth, or strain again through the sieve.

Chill

Transfer the custard to a shallow bowl, cover surface directly with plastic wrap to prevent a skin, and refrigerate until completely cold, at least 3 hours or overnight. Chilling thoroughly improves texture and helps low-sugar ice cream freeze properly.

Prepare chocolate

While the base chills (or in the last 30 minutes before churning), roughly chop 3 oz sugar-free dark chocolate into small pieces. Optional: place chopped chocolate in freezer for 10–15 minutes so it breaks into firm shards when stirred into cold ice cream later.

Churn

Once the custard is thoroughly chilled, give it a quick stir and transfer it to your ice cream maker. Churn according to the manufacturer’s instructions until it reaches a soft-serve consistency, typically 20–30 minutes.

Add mix-ins

During the last 2–3 minutes of churning, add the chilled chopped chocolate and 2 tablespoons cocoa nibs or low-sugar chips so they distribute evenly. If you prefer a mint ribbon or swirls, gently fold a teaspoon of extra peppermint extract mixed with a teaspoon of water into the churned ice cream after churning rather than during.

Finish & Serving

Harden and store

Transfer the churned ice cream into a loaf pan or airtight container. Smooth the top, press a piece of parchment directly on the surface to minimize ice crystals, and freeze until firm, at least 3–4 hours.

Serve

When ready to serve, remove from freezer 5–10 minutes before scooping to soften slightly. Scoop portions into bowls or cones, dust lightly with 1 teaspoon black cocoa or extra unsweetened cocoa for deeper color if desired, and garnish with fresh mint sprigs.

Storage notes

Keep ice cream stored in an airtight container in the freezer for up to 2 weeks for best texture. Because this is low-sugar, texture can be slightly firmer; allow a brief thaw before scooping. If ice crystals form, stir once after 30 minutes of thaw to break them up.
