Measure and powder sweeteners
If using granulated erythritol or allulose, grind them in a spice grinder or high-speed blender until a fine powder (confectioners' consistency) to avoid grittiness. Combine powdered erythritol and optional powdered allulose and set aside.
Chop the unsweetened baking chocolate into small, even pieces so it melts evenly. Measure cocoa butter, salt, vanilla, and any optional add-ins.
Melting & Tempering (Stovetop / Double Boiler)
Set up double boiler
Bring a small saucepan with 2–3 cm of water to a gentle simmer. Place a heatproof bowl (glass or metal) over the pan so the bowl bottom does not touch the water.
Cool and temper
Remove the bowl from the heat. Continue stirring off-heat until the chocolate temperature drops to about 28–29°C (82–84°F) for dark-style low-sugar chocolate. If you have a thermometer, monitor temperature; if not, stir until the chocolate thickens slightly and is comfortably warm, not hot. (Optional: If the chocolate does not reach this temperature, stir until slightly cooled.)
Reheat slightly
Place the bowl back briefly over the warm (not simmering) water for just a few seconds at a time, stirring, until the chocolate reaches about 31–32°C (88–90°F). This step stabilizes the cocoa butter crystals for a glossy snap. If you skip tempering, the chocolate will still set but may bloom or have a softer texture.
Sweetening, Flavoring & Mixing
Once the chocolate is at target temperature, quickly whisk in the powdered erythritol/allulose mixture, powdered stevia (or liquid stevia), fine sea salt, and vanilla extract. Whisk briskly to incorporate; ensure there are no visible sugar granules. Taste a small amount (cooled on a spoon) and adjust sweetness with a pinch more powdered erythritol or a drop more stevia if needed.
If using chopped nuts, seeds, or shredded coconut, fold them in now for an even distribution. Reserve a small handful to sprinkle on top if desired.
Molding & Setting
Pour the melted chocolate into silicone molds or a parchment-lined small baking tray. Tap the mold gently on the counter to remove air bubbles and level the surface. Sprinkle reserved nuts/coconut and a pinch of sea salt flakes on top if using.
Allow the chocolate to cool at room temperature for 20–30 minutes, then transfer to the refrigerator for 20–40 minutes to fully set. Avoid freezing as it can cause condensation and texture changes.
Once set, unmold the chocolate. Store in an airtight container in a cool, dry place (15–18°C / 59–64°F) for up to 2–3 weeks, or refrigerate for longer storage. Bring to room temperature before eating for best flavor and texture.
Notes & Variations
If you prefer a softer, less-snap texture (for bars with fillings), omit the tempering step and cool the chocolate slowly in the refrigerator.
