Measure and sift

Measure cocoa powder, powdered sugar, and milk powder (if using). Sift the cocoa powder and powdered sugar together into a bowl to remove lumps and ensure even texture.

Chop or measure any optional add-ins (nuts, dried fruit) and set molds or a parchment-lined tray nearby so the tempered chocolate can be poured right away.

Melt and Temper (Simple stovetop method)

Prepare double boiler

Place a heatproof bowl over a saucepan with 1–2 inches (2.5–5 cm) of simmering water, making sure the bowl does not touch the water. Keep the water at a gentle simmer, not a rolling boil.

Melt cocoa butter

Add the cocoa butter (or coconut oil) to the bowl and stir occasionally until fully melted and smooth, about 3–5 minutes.

Combine dry ingredients

Reduce heat so the steam is gentle. Remove the bowl briefly from the double boiler and add the sifted cocoa powder and powdered sugar (and milk powder if using) to the melted cocoa butter. Stir with a dry spatula or whisk until the mixture is smooth and fully incorporated. If lumps remain, return briefly to the double boiler and stir until smooth.

Heat to dissolve and stabilize

Place the bowl back on the double boiler and warm the mixture gently until the temperature reaches about 45–50°C (113–122°F) for dark-style chocolate or 40–45°C (104–113°F) for milk-style. Use a thermometer if available. Stir constantly to maintain even heat.

Cool to working temperature

To slightly temper and stabilize, remove the bowl from the heat and allow the chocolate to cool while stirring. Aim for around 28–29°C (82–84°F) for dark-style or 27–28°C (80–82°F) for milk-style. You can speed cooling by placing the bowl over a larger bowl filled with ice water for short intervals while stirring, but avoid getting water into the chocolate.

Rewarm slightly (if needed)

If the chocolate has cooled below the working temperature, return briefly to the double boiler and warm to the final working temperature: 31–32°C (88–90°F) for dark chocolate or 29–30°C (84–86°F) for milk chocolate. Do not exceed these temperatures.

Flavoring and Pouring

Add vanilla and salt

Stir in the vanilla extract and the fine salt thoroughly to round out flavor. Taste a small smear on a spoon to check sweetness and balance; adjust by adding a little more powdered sugar if desired (add in 1–2 tsp increments and dissolve).

Fold in add-ins (optional)

If using chopped nuts or dried fruit, fold them into the chocolate now so they are evenly distributed. Reserve a few pieces to sprinkle on top for presentation if desired.

Pour into molds

Pour the finished chocolate into molds or spread it onto the parchment-lined tray to a thickness of about 1/4 inch (6 mm). Tap the molds gently on the counter to release air bubbles and smooth the surface with an offset spatula if needed.

Finish and sprinkle

If desired, sprinkle reserved nuts, dried fruit, or a light dusting of sea salt flakes on top immediately after pouring so they adhere to the wet chocolate.

Cooling and Storage

Let the chocolate set at room temperature until firm (1–3 hours depending on room temperature). For faster setting, place molds in the refrigerator for 15–30 minutes, but note refrigeration can sometimes dull shine—allow chocolate to come to room temperature before serving for best texture and flavor.

Once set, pop chocolates from molds or break slab into pieces. Store in an airtight container in a cool, dry place away from strong odors for up to 2 weeks, or in the refrigerator for up to 1 month (bring to room temperature before eating).
