Prepare the Yeast
In a small bowl, combine warm water and yeast. Let it sit for about 5 minutes until it becomes frothy.
Knead the Dough
Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth and elastic.
Let it Rise
Place the dough in a greased bowl, cover it with a clean cloth, and let it rise in a warm place for about 1-2 hours, or until doubled in size.
Shape the Beignets
Once risen, turn the dough out onto a floured surface and roll it out to about 1/4 inch thick. Cut into squares.
Fry the Beignets
Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the beignet squares in batches until golden brown, about 2-3 minutes on each side.
Dust with Powdered Sugar
Remove the beignets from the oil and drain on paper towels. While still warm, dust generously with powdered sugar.
Serve
Serve the beignets warm with extra powdered sugar on the side.
