Shrimp
Cook shrimp (poach-then-sear method for tender, flavorful shrimp)
Bring a medium saucepan of water to a gentle simmer (not a rolling boil). Add a pinch of salt and the juice of half a lemon to the water. Add the seasoned shrimp and poach for 2 minutes, or until just opaque and slightly firm. Immediately transfer shrimp to an ice bath to stop cooking and chill for 3–4 minutes. Drain thoroughly and pat dry.
Finish in pan
Heat a skillet over medium-high heat and add 1 tbs olive oil. When shimmering, add the drained shrimp in a single layer and sear 30–45 seconds per side until lightly golden (they are already cooked, this step adds texture). Remove from pan and keep chilled on an ice bed until serving, or hold warm if serving hot (see serving note).
Atomic Cocktail Sauce
In a bowl, combine ketchup, prepared horseradish, sriracha, minced chipotle, lime juice, rice wine vinegar, Worcestershire sauce, smoked paprika, hot sauce and honey. Whisk until smooth.
Taste and adjust heat and acid: add more horseradish for sharper heat, more sriracha or hot sauce for chili heat, or a dash more honey if it needs balance. Season with sea salt and black pepper. Chill at least 15 minutes so flavors meld; sauce can be made up to 24 hours ahead and refrigerated.
Herb-Garlic Butter (optional finishing for warm service)
Melt butter in a small saucepan over low heat. Add the minced garlic and cook 20–30 seconds until fragrant (do not brown). Remove from heat and stir in chopped parsley and lemon zest.
Assemble & Serve
Fill individual cocktail glasses or a large shallow bowl with crushed ice or ice chips to create a cold bed. Spoon 2–3 tbs of the Atomic Cocktail Sauce into a small ramekin and nestle into the ice.
Serve immediately. Leftover sauce can be refrigerated up to 5 days; cooked shrimp keep 24 hours refrigerated.
