Soak the Cedar Plank

Soak the cedar plank in water for at least 1 hour prior to grilling to prevent it from catching fire.

Prepare the Marinade

In a small bowl, mix together the Jamaican brown sugar, soy sauce, lemon juice, minced garlic, black pepper, and a pinch of salt. This will be your glaze.

Preheat the Grill

Preheat your grill to medium-high heat.

Prepare the Salmon

Pat the salmon fillet dry with paper towels. Rub the olive oil over the surface of the salmon, then season with salt and lemon pepper seasoning to taste.

Glaze the Salmon

Brush the glaze generously over the salmon fillet, reserving some for later.

Grill the Salmon

Place the soaked cedar plank on the grill and close the lid. After about 5 minutes, when the plank begins to smoke, place the salmon on top of the plank. Close the lid and grill for about 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

Serve

Remove the plank from the grill and brush the salmon with any remaining glaze. Serve directly from the plank for a rustic presentation.
