Heat 5 gallons of water to 165°F (74°C). Add the pale malt and caramel malt to the water and maintain a temperature of 152°F (67°C) for 60 minutes.

Mashing

After mashing, sparge the grains with hot water to collect around 6.5 gallons of wort.

Lautering

Bring the wort to a boil. Once boiling, add the cluster hops and boil for 60 minutes. 15 minutes before the end of the boil, add the cascade hops.

Boiling

Cool the wort quickly to around 70°F (21°C) using a wort chiller or an ice bath.

Cooling

Transfer the cooled wort to a sanitized fermentation vessel and pitch the yeast. Seal the vessel and allow fermentation to take place at 50-55°F (10-13°C) for 2 weeks.

Fermentation

After fermentation, siphon the beer into sanitized bottles, adding priming sugar if desired for carbonation. Cap the bottles and let them condition for another 2 weeks.
