Double IPA · 8.5% · Buffalo, NY - This delicious Double IPA comes via our friends at Thin Man brewing in Buffalo. Soft, juicy, slightly dank and loads of tropical fruit notes throughout.

Heat 3 liters of water to 66°C (150°F) and add the pale malt and caramel malt. Maintain the temperature for 60 minutes.

Mash the Grains

After mashing, sparge the grains with 3 liters of hot water to collect the wort.

Sparge

Bring the wort to a boil, then add the Citra hops. Boil for 60 minutes, adding Mosaic hops at 15 minutes remaining and Simcoe hops at 5 minutes remaining.

Boil the Wort

After the boil, quickly cool the wort down to about 20°C (68°F) using a wort chiller.

Cool the Wort

Transfer the cooled wort to a fermentation vessel and pitch the yeast. Seal and allow to ferment for 2 weeks.

Fermentation

After fermentation, dissolve priming sugar in a small amount of water and add to the beer. Bottle the beer and cap tightly.

Bottling

Let the bottles carbonate at room temperature for another 2 weeks before chilling and enjoying.
