Heat 3 gallons of water to 160°F (71°C). Add the pale malt barley and caramel malt barley to the water and maintain the temperature for 60 minutes.

Mash the Grains

After the mash is complete, sparge the grains with another 2 gallons of heated water at 170°F (77°C) to extract the sugars.

Bring the wort to a boil and add the hops. Boil for 60 minutes, adding additional hops at 15 and 5 minutes remaining for flavor and aroma.

Boil the Wort

After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches approximately 70°F (21°C).

Cool the Wort

Transfer the cooled wort into a sanitized fermenter and pitch the yeast. Seal the fermenter and let it ferment at 68-72°F (20-22°C) for about 1-2 weeks.

Fermentation

Once fermentation is complete, transfer the beer to bottles or a keg, adding priming sugar if bottling for carbonation.

Let the beer condition for at least 1 week before chilling and enjoying.
