Pale Lager · 5.0% · Saint John, New Brunswick - A pale lager that pours a nice beautiful golden yellow color and offers a good balance between malt sweetness and hop bitterness.

In a large mash tun, heat 5 liters of water to approximately 165°F (74°C). Add the pale malt and caramel malt, stirring well to combine. Maintain the temperature at around 150°F (65°C) for 60 minutes.

Mashing

After mashing, sparge with enough water to collect about 6 liters of wort in the brew kettle.

Sparging

Bring the wort to a boil. Once boiling, add Hallertau hops and boil for 60 minutes. 15 minutes before the end of the boil, add the Saaz hops.

Boiling

After the boil, cool the wort quickly to about 65°F (18°C) using a wort chiller.

Cooling

Transfer the cooled wort to a fermentation vessel and pitch the yeast. Seal with an airlock and ferment at 50-55°F (10-13°C) for 2-3 weeks.

Fermentation

After fermentation, dissolve priming sugar in a small amount of boiling water and add it to the beer before bottling. Bottle the beer and cap securely.

Bottling

Let the bottles condition at room temperature for about 2 weeks to carbonate.

Conditioning
