Heat 19 liters of water to about 70°C (158°F) and then add the barley malt and roasted barley. Stir well and let it steep for 60 minutes at 65°C (149°F).

Prepare the Mash

After mashing, sparge the grains with hot water to collect the wort. Bring the wort to a boil and add the hops. Boil for 60 minutes.

After boiling, quickly cool the wort to about 20°C (68°F) using a wort chiller.

Cool the Wort

Transfer the cooled wort to a fermentation vessel and pitch the yeast. Seal the vessel and let it ferment for about 1-2 weeks at a stable temperature of around 18-20°C (64-68°F).

Fermentation

Once fermentation is complete, transfer the beer into a keg and carbonate with nitrogen gas to give it that creamy texture. Allow it to sit for a few days for best results.

Nitrogenation

Pour the Guinness Draught Nitro into a glass, allowing it to settle and form a creamy head before enjoying.
