Balanced Pale ale brewed with El,, and Mosaic.

Heat 5 gallons of water to 165°F (74°C) and add the pale malt and caramel malt. Maintain the mash temperature at 152°F (67°C) for 60 minutes.

Mashing

After 60 minutes, sparge the grains with hot water until you have collected about 6.5 gallons of wort.

Sparging

Bring the wort to a boil and add the Mosaic hops. Boil for 60 minutes, adding the El Dorado hops in the last 15 minutes of the boil.

Boiling

After the boil, cool the wort to about 70°F (21°C) using a wort chiller.

Cooling

Transfer the cooled wort to a fermentation vessel and pitch the yeast. Seal and ferment at around 68°F (20°C) for 1-2 weeks.

Fermentation

Once fermentation is complete, dissolve the priming sugar in a small amount of water and add it to the beer. Bottle the beer and let it carbonate for 1-2 weeks at room temperature.
