In a large pot, heat 5 liters of water to approximately 70°C (158°F). Add the pale malt, wheat malt, and oats. Maintain the temperature for about 60 minutes.

Mashing

After mashing, drain the liquid (wort) into a separate vessel. Sparge the grains with additional water to extract more sugars.

Lautering

Bring the wort to a boil. Add the bittering hops and boil for 60 minutes. During the last 15 minutes, add the sweet orange peel and coriander.

Boiling

Cool the wort quickly using a wort chiller or ice bath until it reaches around 20°C (68°F).

Cooling

Transfer the cooled wort to a sanitized fermentation vessel and pitch the yeast. Seal and allow it to ferment for about 1-2 weeks.

Fermentation

Once fermentation is complete, dissolve the priming sugar in a small amount of boiling water, cool, and add to the beer before bottling.

Bottling

Bottle the beer and let it carbonate at room temperature for 1-2 weeks.

Carbonation

Chill the bottles, pour into a glass, and enjoy your homemade Blue Moon Belgian Style Wheat!
