Prepare the Shrimp Mousseline

In a food processor, combine the shrimp, heavy cream, egg white, garlic, salt, and black pepper. Blend until smooth and creamy.

Mix with Crab Meat

Gently fold in the lump crab meat and chopped chives into the shrimp mousseline mixture, ensuring not to break the crab meat.

Prepare Oysters

Preheat your oven to 200°C (400°F). Shuck the fresh oysters, placing them in a baking dish, and top each oyster with a generous spoonful of the shrimp and crab mixture.

Bake

Drizzle melted butter over the oysters and sprinkle grated Parmesan cheese on top. Bake in the preheated oven for about 10-12 minutes or until the topping is golden brown and the oysters are cooked through.

Serve

Remove from the oven and let cool slightly. Garnish with additional chives if desired and serve warm.
