Dry ingredients
In a large bowl, sift or whisk together 2.25 cups all-purpose flour, 2 cups granulated sugar, 0.75 cup unsweetened cocoa powder, 1.5 tsp baking powder, 1.5 tsp baking soda, and 1 tsp fine salt until evenly combined.
Wet ingredients
In a separate medium bowl, whisk 2 large eggs, 1 cup whole milk, 0.5 cup vegetable oil and 2 tsp vanilla extract until smooth.
Combine batter
Pour the wet ingredients into the dry ingredients and stir gently until just combined. The batter will be thick. Slowly pour in 1 cup hot brewed coffee while stirring; mix until batter is smooth and uniform. The coffee thins the batter and intensifies chocolate flavor.
Divide and bake
Divide batter evenly among the three prepared 8-inch pans (use a kitchen scale or measure roughly). Smooth tops. Bake in preheated oven 22–26 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs and the cakes spring back when lightly pressed.
Cool
Allow cakes to cool in pans for 10 minutes, then run a knife around edges and invert onto racks. Peel off parchment and cool completely (at least 1 hour) before assembling so frosting doesn't melt.
Chocolate Ganache (Middle Layer)
Chop or measure 8 oz semi-sweet chocolate chips into a heatproof bowl (if using a bar, chop finely). Heat 0.75 cup heavy cream in a small saucepan over medium until it just begins to simmer (steam rising, small bubbles at edge).
Pour hot cream over chocolate and let sit undisturbed 2 minutes to soften. Add 1 tbsp unsalted butter and 1 tsp light corn syrup (if using). Gently stir from center outward until glossy and smooth. If any unmelted bits remain, microwave in 10-second bursts, stirring between, until fully melted.
Cool ganache at room temperature, stirring occasionally, until it thickens to a spreadable consistency but is still pourable—about 20–30 minutes. If it becomes too firm, warm briefly (5–8 seconds) in microwave and stir to loosen.
Reserve about 1 cup of ganache for the middle layer; any extra can be used for drips or decoration.
Chocolate Buttercream (Frosting)
In a large bowl using a mixer, beat 1 cup room-temperature unsalted butter on medium speed until pale and fluffy, about 2–3 minutes.
Sift or add 0.75 cup unsweetened cocoa powder and 3.5 cups powdered sugar gradually, mixing on low to avoid a cloud. When incorporated, increase speed to medium and add 0.25 cup heavy cream, 1 tsp vanilla extract, and 0.25 tsp fine salt.
Beat 2 oz melted dark chocolate (cooled to warm) into the buttercream until uniform. Taste and adjust texture or sweetness: add up to 2 tbsp more cream if too stiff, or add a few tablespoons powdered sugar if too thin. Beat on high for 30 seconds for a light, silky texture.
Assembly & Decoration
Level the cake layers if needed: use a serrated knife or cake leveler to remove domes so layers stack flat.
Place the first cake layer (bottom) on a cake board or serving plate. Spread a thin crumb coat of chocolate buttercream (about 1/2 cup) to create a base layer for the ganache and prevent crumbs. Chill 10 minutes to set the crumb coat if necessary.
Spoon and spread half of the prepared ganache (about 1 cup) evenly over the crumb-coated first layer, leaving 1/4 inch from edge to avoid overflow when stacking. This is the deep chocolate middle layer.
Place the second cake layer on top, press gently to adhere. Spread about 1 cup of buttercream over this layer (not the ganache) to create an even filling and support the top layer.
Top with the third cake layer. Apply a thin crumb coat of buttercream over the entire cake (sides and top) using an offset spatula. Chill the cake 15–20 minutes until the crumb coat sets.
Apply the final coat of chocolate buttercream, smoothing the top and sides. For a clean finish, use a bench scraper and warm the spatula in hot water, wiping dry between passes.
Optional: drizzle remaining ganache around the edge for drips and spread a little on top center. Decorate with 1/2 cup chocolate shavings or curls and dust lightly with 1 tsp cocoa powder. Finish with a tiny pinch (0.25 tsp) of coarse sea salt over the ganache for contrast if desired.
Chill the assembled cake 30 minutes to set the frosting and ganache before slicing. Remove from fridge 20–30 minutes before serving to bring to ideal texture.
