Prep chicken and vegetables

If using leftover or rotisserie chicken, shred or dice to measure 2 cups. Finely dice the onion and red bell pepper. Chop the cilantro and set aside.

Cook aromatics

Heat 1 tablespoon oil in a 10-inch skillet over medium heat. Add the diced onion and red bell pepper and sauté 4–5 minutes until softened and translucent. Stir frequently to avoid browning.

Season and combine

Add the shredded chicken to the skillet along with 1 teaspoon ground cumin, 1 teaspoon chili powder, 3/4 teaspoon salt, and 1/2 teaspoon black pepper. Stir and cook 2–3 minutes until mixture is heated through. Remove from heat and stir in 2 tablespoons chopped cilantro and 1 tablespoon lime juice. Taste and adjust seasoning if needed.

Mix cheeses

In a bowl, combine 1.5 cups shredded cheddar and 1 cup shredded Monterey Jack so they are ready for assembly.

Tortillas & Assembly

Heat skillet

Wipe the same skillet clean and return to medium-low heat. Add 1 tablespoon butter or oil and let it melt and coat the pan.

Assemble quesadillas: Lay one large flour tortilla flat. Sprinkle a thin even layer (about 1/2 cup) of the cheese mixture over one half of the tortilla, leaving a 1/4-inch edge. Spoon about 1/2 cup of the warm chicken filling over the cheese, then top with another 1/4 cup of cheese (this helps the quesadilla seal). Fold the uncovered half of the tortilla over the filling to form a half-moon.

Cook quesadilla: Place the folded quesadilla in the preheated skillet. Cook 2–3 minutes per side, pressing gently with a spatula, until the tortilla is golden brown and the cheese is melted. Adjust heat as needed to prevent burning. Repeat with remaining tortillas and filling, adding more butter or oil to the skillet as necessary.

Keep warm: Transfer finished quesadillas to a baking sheet and keep in a 200°F (95°C) oven while you finish the rest so they stay warm and the cheese stays melty.

Slice: Let each quesadilla rest 1 minute, then cut into 3 wedges (or 4 if preferred) using a sharp knife or pizza cutter.

To Serve

Plate: Arrange quesadilla wedges on a serving platter. Garnish with extra chopped cilantro and lime wedges.

Serve with salsa and sour cream: Put 1 cup salsa and 1/2 cup sour cream in small bowls for dipping, or drizzle sour cream thinly over quesadillas. Offer lime wedges to squeeze over the quesadillas for brightness.

Storage: Leftover quesadillas can be refrigerated in an airtight container for up to 3 days. Reheat in a 350°F (175°C) oven or in a skillet over medium-low heat until warmed through and the tortilla is crisp.
