Preparation of Whipped Pumpkin Ricotta

Make the Ricotta Mixture

In a mixing bowl, combine the ricotta cheese, pumpkin puree, honey, ground cinnamon, nutmeg, and vanilla extract. Use a hand mixer or stand mixer to whip the mixture until it is smooth and creamy, about 3-4 minutes. Set aside.

Pickling the Pears

Prepare the Pickling Solution

In a medium saucepan, combine the white vinegar, sugar, water, cinnamon sticks, and star anise. Bring the mixture to a boil over medium-high heat, stirring until the sugar is dissolved.

Pickle the Pears

While the pickling solution is heating, slice the pears into thin wedges. Once the solution has boiled, remove it from the heat and add the pear slices. Let the mixture cool to room temperature before transferring it to a jar. Refrigerate for at least 1 hour before using.

Serving the Dish

Assemble the Dish

Spread a generous amount of the whipped pumpkin ricotta on a serving platter. Top with the pickled pears, and sprinkle with chopped pistachios and black Hawaiian sea salt. Drizzle with pumpkin seed oil for extra flavor.

Serve with Baguette

Slice the Circle City Sweets baguette into thin slices and arrange them on the side for dipping into the whipped pumpkin ricotta mixture.
