Sauté the Base Ingredients

In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes, or until the vegetables start to soften.

Add Garlic

Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant.

Cooking the Soup

Incorporate Vegetables

Add the diced zucchini, bell pepper, and chopped spinach to the pot. Stir well to combine and cook for another 3-4 minutes.

Add Liquids

Pour in the vegetable broth and bring the mixture to a boil.

Add Legumes and Grains

Once boiling, add the drained chickpeas and rinsed quinoa. Reduce heat to low and let the soup simmer for about 20 minutes, or until the quinoa is cooked.

Finishing Touches

Season the Soup

Add cumin, paprika, salt, and black pepper to taste. Stir well to combine.

Add Lemon Juice

Just before serving, stir in the lemon juice for brightness and flavor.
