Shrimp
Prepare the Shrimp
In a bowl, toss the shrimp with Cajun seasoning and olive oil until evenly coated.
Cook the Shrimp
Heat a skillet over medium-high heat and add the seasoned shrimp. Cook for about 3-4 minutes on each side until the shrimp are opaque and cooked through. Remove from heat and set aside.
Farfalle
Boil Water
In a large pot, bring 4 cups of water to a boil. Add 1 tablespoon of salt to the boiling water.
Cook Pasta
Add the egg farfalle pasta to the boiling water and cook according to package instructions, typically about 7-9 minutes, until al dente. Drain and set aside.
Cajun Romesco
Blend the Romesco
In a blender or food processor, combine the roasted red peppers, toasted almonds, minced garlic, olive oil, red wine vinegar, Cajun seasoning, and salt. Blend until smooth and creamy. Adjust seasoning to taste.
Whipped Ricotta
Prepare the Ricotta
In a mixing bowl, combine the ricotta cheese, heavy cream, and salt. Using a hand mixer or whisk, whip the mixture until smooth and creamy.
Assembly
Plate the Dish
On a serving plate, place a portion of the cooked farfalle. Top with the blackened shrimp, drizzle with Cajun romesco, and dollop the whipped ricotta. Garnish with torn fresh basil.
