Cooking the Pasta
Boil the Pappardelle
In a large pot, bring salted water to a boil. Add the pappardelle pasta and cook according to package instructions until al dente. Once cooked, reserve about 1 cup of pasta water, then drain the pasta and set aside.
Preparing the Sauce
Sauté Aromatics
In a large skillet, heat the olive oil over medium heat. Add the chopped shallots and sauté for about 2-3 minutes until they become translucent. Add the minced garlic and sauté for an additional minute.
Combine Broth and Seasonings
Add the vegetable broth, oregano, thyme, salt, and black pepper to the skillet. Bring the mixture to a gentle simmer and let it cook for about 10 minutes, stirring occasionally.
Combine Pasta and Sauce
Mix the Pappardelle with Sauce
Add the drained pappardelle to the skillet with the mushroom sauce. Toss gently to combine, adding reserved pasta water as needed to achieve desired consistency.
Serving
Plate the Dish
Serve the mushroom bolognese hot, garnished with grated Parmigiano Reggiano and chopped fresh basil.
