Preparing the Mushrooms

Clean and Prepare Mushrooms

Rinse the mushrooms under cold water and pat them dry with a paper towel. Remove the stems if using shiitake mushrooms and slice the mushrooms into bite-sized pieces.

Coat the Mushrooms

Place the cornstarch in a bowl. Toss the mushroom pieces in the cornstarch until they are evenly coated. Shake off any excess cornstarch.

Frying the Mushrooms

Heat the Oil

In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

Fry the Mushrooms

Carefully add the coated mushrooms to the hot oil in batches. Fry until they are golden brown and crispy, about 4-5 minutes. Remove with a slotted spoon and drain on paper towels.

Making the Gochujang Honey Sauce

Combine Sauce Ingredients

In a small bowl, whisk together the gochujang, honey, soy sauce, and sesame oil until smooth and well combined.

Toss the Fried Mushrooms

In a large bowl, combine the fried mushrooms with the gochujang honey sauce. Toss until the mushrooms are evenly coated.

Serving

Plate the Dish

Transfer the coated mushrooms to a serving platter. Top with baechu kimchi, sliced daikon radish, furikake, and chopped scallions before serving.
